The Gourmand's Mushroom. A Collection of Stories and Recipes
Fungal fantasy
A stew of stories and recipes exploring the mushroom as myth, medicine and muse.
Mushrooms — psychoactive, medicinal or delicious — have fascinated us for millennia. They have accompanied spiritual quests both ancient and modern, and their capricious shapes have inspired artists from Bosch to Kusama. This is the third, delectable volume of The Gourmand for TASCHEN: a mycological journey packed with original stories and recipes.
Revered as food, medicine, sacrament and symbol, mushrooms spring up suddenly and vanish just as fast, leaving behind an unmistakable cultural and culinary aftertaste. The volume brings together The Gourmand's signature blend of culinary craft and cultural inquiry, with photography that celebrates mycological wonders as sculpture, pattern and form.
The essays range from ancient folklore and toxicology to avant-garde art, architecture, fashion, film and space travel. Its pages feature Bosch and Beatrix Potter, María Sabina and the CIA, Yayoi Kusama and Takashi Murakami, amid fairy rings, fly agarics and the enduring allure of lingzhi.
Alongside the texts, an extensive collection of original recipes: Cantonese-style stuffed mushrooms, crispy tempura, pierogi, risotto, ramen-adjacent condiments, wild mushroom ravioli, classic duxelles and traditional mushroom ketchup. The book opens with a lyrical reflection on fleetingness, foraging and culinary memory from chef and writer Jeremy Lee.
The authors: The Gourmand is David Lane and Marina Tweed, founders of the food and culture magazine launched in London in 2011. Their work has appeared in The New York Times, The Guardian, Die Zeit and Le Monde, and has been exhibited at the Design Museum in London.
Editorially experimental and visually conceptual, yet highly accessible thanks to the sheer ingenuity of its ideas. — The Guardian
